Summer in a Salad

I love this summer in a salad for lunch or served as a first course for dinner.  The crunch of the sweet watermelon, tang of key lime, refreshing apple mint and rich salty feta firmly places this salad in my top 5 fav for summer.  It hydrates, while cooling you down and keeps the belly light during the hot summer days.   Here is the recipe below for bliss in your belly - enjoy!!


Summer in a Salad

Serves 2

2 cups watermelon seeded and cut in cubes

1 avocado cut into small cubes

2 tablespoons red onion diced small or in thin rings

4 key limes juiced

6-8 leaves of apple mint (or any mint) sliced into thin ribbons with chiffonade cut of your knife

2-4 tablespoons crumbled feta cheese (I love feta from Israel which is smoother and less tart)

Drizzle of extra virgin olive oil

Sea salt and fresh ground pepper to taste

*note I recommend using organic, in season and locally sourced ingredients whenever possible! 


1. Place watermelon, mint, red onion and avocado in a bowl.

2. Drizzle olive oil then add juice of key limes, sea salt and pepper to taste.  Stir to combine.

3. Pour all into a serving bowl or plate.  Top with crumbled feta and a more ribbons of mint.

4.  You can also make this about 1/2 hour in advance and place in fridge for maximum coolness.
