Sweet Watermelon, Key Lime, Mint, and Flower Essence Infused Agua Fresca
Happy Fourth of July!
Since I feel like I’m the last person in Phoenix that didn’t flee to the beach or the mountains this weekend, you’ll find me and the Viking in our pool sipping some of this refreshing Agua Fresca Sandia made from sweet watermelon, key limes, apple mint and drops of Joy Juice flower essence!
I love to make this all summer long to have on hand especially when I’m bored of drinking the 1000th glass of water.
Agua Frescas, literally meaning fresh waters, are liquid gold made not only from watermelon, but any sweet ripe fruit like cantaloupes, pineapple and mangos. There are even more savory versions like horchata made from rice with cinnamon and Jamaica made from hibiscus flowers. As a border state, Arizona benefits from some of the most delicious culinary influences from Mexico and this is one that I covet. Go to any Mexican grocery store or bodega and you’ll find large 5 gallon tapadera honeycomb looking containers lined up on the counter filled with a rainbow of colors and exotic flavors to choose from. I can’t resist getting one every single time.
It is said the Aztec farmers started the agua frescas party. While paddling their canoes to Mexico City to sell their harvests, they needed something to quench their thirst and began muddling fresh fruit with water to make the OG versions of this drink.
Should ever you get to one of the Phoenix area Farmer’s markets and see the lovely people from Cantaguas, you must stop and grab a glass from them! They make some of the most delicious ones - like Strawberry with Chia Seeds and Rose Petals and Cucumber. Muy deliciosas y refrescantes!
And just saying - a splash of tequila, rum or vodka takes them up a notch too :) The key is serving it with tons of ice, lime wedges and sprigs of mint for the ideal bliss full belly effect.

Watermelon, Lime, Mint, Flower Essence Infused Agua Fresca
Serves 6 (large) or 8 (small) glasses
Dairy Free, Gluten Free
Prep time: 15 minutes
Recommend using organic, local and fresh harvested ingredients whenever possible. Support your local growers by shopping from the Farmer’s Markets in your community.
8 cups (about 1⁄2 of a medium) seedless watermelon cubes
1⁄4 or more cup fresh squeezed lime juice – use key limes for best flavor
6 mint (yerba buena) leaves whole - I used apple mint from my garden
6 tablespoons agave nectar - add more or less for your taste
10x drops Joy Juice Elixir from Lotus Wei (optional)
A few cups of water
Extra mint and lime slices for garnish
Tons of ice cubes
Place watermelon in a blender and mix until smooth 1 minute. Hint: you should have about 5 cups of juice.
Use a fine strainer or sieve to strain juice into a medium bowl to remove pulp and any small seeds.
Stir in lime juice, water and agave nectar. Hint: add agave a tablespoon at a time until you get the desired sweetness.
Place in a closed jar or pitcher, add the mint leaves, lime wedges and ice then refrigerate until ready to serve.
Add ice to the glass, extra mint and lime slices before serving.
